Healthy Snack Recipe: Chocolate Crepes

For those of you out there who have children, you know how important it is to have healthy snacks around the home so that when they are heading to school or coming back from a friend's house they can grab something on the go and get the nutrition that they need to strive. Whether you want a healthy breakfast recipe or any other healthy snack recipe, here are a few great ideas to help you get started.

Chocolate Crepes

One healthy snack recipe that your kids are sure to love is chocolate crepes. You could whip this up for them for breakfast, or just keep them in the fridge so the kids can nosh on them whenever they get hungry.

They are very easy to make, and this healthy snack recipe is one that no kid is going to turn down. For the filling you need ½ cup semisweet chocolate chips, 2 tablespoons butter, ½ cup confectioner's sugar, ¼ cup light corn syrup, 2 tablespoons crème de cacao, 2 tablespoons water, ½ teaspoon vanilla, 1 quart chocolate ice cream, and ½ cup pecans chopped.

For the crepes themselves you will need ½ cup flour, 1 tablespoon cocoa, 2 teaspoons sugar, 1 dash salt, ¾ cup milk, ¼ teaspoon almond extract, 1 egg, 2 teaspoons melted butter, and oil.

You start by making the crepes, and to do this you need to combine the flour, cocoa, sugar, and salt. Add the milk and almond extract in next, and beat until completely smooth. Then you want to add in the egg and beat well, stir in butter next, and then leave in the refrigerator for about two hours.

Now to prepare the filling for this healthy snack recipe you just combine the chocolate chips and butter in the top of a double boiler, and bring water to a boil. You reduce the heat to low and cook, making sure to stir often so it does not stick. Then you want to remove from heat, add in the confectioner's sugar, corn syrup, crème de cacao, water, and vanilla. Stir until smooth.

The next step in this healthy snack recipe is to spoon about 3 tablespoons of the ice cream down the center of each crepe, and you want to fold the sides over and place seam side on serving dishes for the nicest presentation.

Spoon some of the warm chocolate sauce over each, and sprinkle with pecans. You and your kids are going to love these crepes.
